Fish Breakfast
FISHERMENS BREAKFAST FISH
There's nothing better tasting hot off of the grill than some fresh caught fish... served with sides of fresh eggs and bacon!
THE INGREDIENTS YOU'LL NEED:
- Trout – 5 or 6
- Bacon – 1 lb thick sliced
- Onion – chopped
- Garlic – minced
- Scallions – diced
- Seafood Rub
- Butter
- Eggs – 1 dz
- Tin Foil
- Black iron skillet – 2
DIRECTIONS
GETTING READY
CLEANING THE FISH
1. Slice each fish open from the bung hole by the tail up to the gills – you want to keep your knife shallow and not to deep so that you do not cut open the entrails
2. Clean out the entrails on each fish
3. Rinse the fish off
4. You now need to remove the large blood vessel that runs along the spine inside the fish cavity
5. Run your thumb nail up and down this blood vessel until removed
6. Rinse the fish again
7. Set up your grill for indirect heat (hot coals on one side of the grill and no coals on the other side of the grill) –
MAKING
FOIL BAKED TROUT
8. In a 12” skillet fry up the bacon
9. Place a trout on a piece of tin foil
10. Sprinkle seafood rub into cavity
11. Stuff the cavity of the fish with a slice of bacon, scallions, onion, garlic and add butter
12. Wrap tightly in the foil
13. Cook time will be about 15 minutes depending on your grill temp.
PAN FRIED TROUT
14. Grease up a skillet or grill pan with butter, place directly over the hot coals
15. Lay your fish onto the griddle
16. Sprinkle with rub and lay some bacon across the fish
17. It will only take a couple of minutes per side to cook the fish
18. To control the temp you can move the skillet to the side of the grill with no coals
19. After a few minutes per side remove the skillet from the grill – the fish will continue to cook from the heat of the pan
THE SCRAMBLED EGGS
20. In a black iron skillet put your cooked diced bacon, chopped scallions, minced garlic, and chopped onion
21. Crack the eggs into a bowl and scramble
22. After the veggies have sautéed for a couple of minutes – pour the eggs into the skillet
23. Constantly stir the eggs to mix and make sure it does not burn
24. Cook until eggs are done
FINALIZING
25. Place a trout on your plate and add a guud helping of scrambled eggs
